Celebrate the season with a farm-to-table holiday dinner crafted and hosted by Chef Paul Shufelt with the freshest ingredients from Lakeside Farmstead. Gather around the table for a plated, multi-course meal that highlights Alberta’s finest farm produce and thoughtfully prepared seasonal flavours. A thoughtful selection of drink pairings will enhance each course, making this a true celebration of local food and festive spirit.

1st Course: Cream of Potato & Chaga Mushroom
Lakeside Farmstead potatoes, cream, butter, foraged chaga mushroom, crisp leeks, chive oil
2nd Course: Beef Carpaccio
Beef tenderloin, shaved clothbound cheddar, rosemary-bonito aioli, pickled shimeji, parsley, capers, wild yeast cracker
3rd Course: Braised Beef Rigatoni
Beef ragout, rigatoni, fromage blanc, micro basil
4th Course: Smoked Brisket
Hayloft’s signature rub, chaga cheddar mashed potatoes, roasted heirloom carrots, crisp shallots
5th Course: Lakeside Farmstead Cheese Table
A selection of the finest cheeses from the Nonay farm, paired with pickles, preserves, nuts, breads, crackers
